Accuracy of patient care staff in estimating and documenting meal intake of nursing home residents

AnnotationProtein energy undernutrition is one of the most common problems found in nursing home residents. In most nursing homes, care staff are responsible for estimating the food intake of the patients. This study investigated the accuracy of staff estimates and documentation of the food intake of 27 nursing home residents, by weighing food and fluids before and after one lunch time meal. It found that staff estimates differed from actual intake by approximately 20%, and in most cases intake was overestimated. Almost one third of residents at risk for nutritional problems were not identified correctly by staff, and chart documentation was frequently incomplete. The study concludes that a new process for identifying residents at risk from nutritional problems should be developed and implemented.
