Annotation | 'Eating profiles' can be defined as types of clients and how they are distinguished by combinations of food preferences, consumption patterns, and preferences for ambience. This article describes the development and initial testing of an instrument to establish eating profiles of 309 clients in nursing homes or residential care homes in the Netherlands. The authors constructed a 35-item, 4-subscale questionnaire. This self-administered, usable instrument derived five eating profiles from clients' perspectives. Insight into eating profiles is important for nursing and care home managers to ascertain that the food, dinner service and ambience are subsequently tailored to their residents' preferences. (RH). |
