Annotation | HealthSense is a pan-European, multi-centre project generating scientific data on the relationships between sensory physiology, perceptions of flavour and texture, sensory memory and food preferences across cultures. HealthSense studies degradation of sensory capabilities that accompany ageing, and determines how such changes affect food preferences in different eating situations. In addition, food preferences are being considered alongside a study of the attitudes and behaviour of older people towards food and choice, and how older people provision their resources. The results of these studies will be published in a format to be used by dietitians and nutritionists, medical and other care providers, policy makers, the food industry, and consumer organisations who support older adults.
