Annotation | Food security is the limited or uncertain availability of nutritionally adequate and safe foods, or limited or uncertain ability to obtain acceptable foods in socially acceptable ways. This study uses food response and interview texts of a multi-ethnic population of over 70s in rural North Carolina, to examine the incidence and experience of food insecurity, and how they maintain food security. 145 elders were interviewed up to five times over the course of one year. While responses to questions indicate that only 12% of older people experience food insecurity, analysis of textual data reveal common themes, suggesting that these questions may underestimate the vulnerability of older people living in rural areas and their difficulties in maintaining good nutrition.
