Korean elderly: diet, food beliefs, and acculturation

AnnotationDietary intakes and food beliefs of Korean older people living in New York City and Seoul, Republic of Korea were compared to assess cultural adherence using a questionnaire about health, eating out, breakfast foods, traditional and medicine foods, and a 24-hour recall. Korean-American older people were more likely to consume "Western style" breakfast foods, eat out in fast food restaurants, and use multi-vitamins. More subjects in Korea recommended foods such as ginseng for health. All subjects consumed kimchee and rice at least once in the 24-hour recall. Diets in both groups were adequate in protein, vitamin C, thiamin, niacin, and phosphorus, but inadequate in energy, vitamin A, riboflavin, calcium, and iron. (RH).
